SAMPLE PROJECT | BLANK STREET

In Fall 2025, WUCC collaborated with Blank Street Coffee, a fast-growing specialty coffee retailer, to identify growth and expansion strategies into major metropolitan cities.

CHALLENGE:

  • Evaluate the attractiveness of various metropolitan cities as next-stage expansion markets for Blank Street

  • Identify competitive whitespace and optimal entry strategies while accounting for operational constraints

PROCESS:

  • Analyze U.S. coffee and matcha market structure and demand drivers

  • Assess city- and neighborhood-level demographics, density, and foot traffic

  • Benchmark competitors and costs to inform market entry decisions

RECOMMENDATIONS:

  • Capitalize on Evanston, Chicago's matcha market gaps as a dominant matcha player

  • Sequence a moderate entry into
    Philadelphia's Center City & University City

  • Leverage university partnerships with Temple, Drexel, and Penn student groups for cafe launch
